red snapper

This weekend was one full of good food.  I know I promised more pictures of my Thanksgiving feast, but I was so busy cooking an eight course dinner in my tiny kitchen that I didn’t have time to take pictures.  When the food was ready, I didn’t have time for a photo shoot because I had six hungry guests.  We feasted on turkey and gravy, mashed potatoes, sweet potatoes, beer bread, grilled plantains, avocado and tomato salad, honey glazed carrots and pumpkin pie.

DISCLAIMER: I had no part whatsoever in preparing this meal.  I merely stood by and watched.  Maybe that’s part of why I enjoyed it so much after cooking like crazy the day before.

The meal was very simple–red snapper and bread.  We were hanging out on the beach in the afternoon and a little boat came ashore.  The fisherman had a catch of fresh red snapper and offered to sell us each a meal for ~$6.  He cut the fish and *mostly* cleaned out the stomach.  Then he threw on some spices (garlic, butter, pepper, cilantro) and wrapped them up in tin foil. They cooked on a grill over a fire.  The snapper was delicious.  Most fish in the DR is fried, overly salty and generally not good.  This was a welcome change and arrived just in time for some hungry beach goers!
